As for whether there's a Japanese "style" of baking like Yakitate tries to propose, well as far as I can see, like most things Japanese that didn't actually originate from Japan, bread/cakes/pastries you get here may look the same as where they originally came from, only almost always with a twist to make it local to Japan only (loaf bread is cut thicker, the existence of "melon bread", macha, read bean and other essential Japanese flavourings, etc.).
